PLEASE READ: If you are local or regional to the Finger Lakes area (able to pick up in person), feel free to reach out to hello@edibleacres.org with a clear wish list of plants and we will work to arrange a pickup.

We update our inventory on March 1st for Spring bare root sales and September 1st for Fall bare root sales. If you are visiting this page and see everything as sold out, please make a note in your calendar to revisit at our next ‘opening’ and pick up some lovely plants!

Our Fall offerings tend to have higher numbers of trees, shrubs, cuttings and a medley of our abundant and fall appropriate herbaceous perennials. Spring offerings will generally have more herbaceous perennials, grasses, etc and a smaller number of trees and shrubs. We weight our inventory in large part based on seasonal appropriateness for establishment. We hope you understand and visit again if you don’t find what you are looking for this time.

Skirret is a hardy perennial root vegetable. The strange and beautiful roots it forms are numerous and like a thin parsnip in shape and color. When left to overwinter in a cold climate, the roots are as sweet or sweeter than any root vegetable you could grow and can easily handle pretty brutal NY state winters with no damage. A root crop you can store in the earth!
Use of Skirret dates back centuries, pre-dating the potato, and they were one of the main root crops eaten across Europe before potatoes were introduced. They fell out of favor because potatoes were easier to prepare, not because of the taste. Skirrets actually taste somewhere between a Parsnip and a carrot with a hint of pepper. Harvested in the fall they are nice, harvested in early spring they are a true treat.

Grown in the Tudor and Stuart periods through to the 1750’s they were used in sweet & savoury dishes and such things as ‘Skirret Pye’. By the 19th century all mention of skirrets was gone from the records and cook books of the day. We are still learning how to work with this magical and under utilized hardy perennial vegetable. Seems to be left alone by deer and rabbits for the most part and offers a nice pile of gentle white umble flowers for native and recent arrival insects to enjoy.

Your order provides you with at least one ready to grow division from a mother plant or a small grouping of ready to grow divisions for a small patch if you order the 3+ option.

Very hardy plant, can deal with wet soil. Enjoys full sun and rich soil but can handle a wider range.
